Broccoli rabe is a curiously delicious vegetable native to southern Italy.
It's hard to say when broccoli rabe first came to the United States, but southern Italy is one of its few points of origin. Referred to as "cime di rape" in Italian, the name translates to "turnip tops." And it is indeed closer to a turnip than broccoli in actual taste.
The best Italian chefs learned long ago to harness the complex flavor of broccoli rabe by pairing it with spicy garlic, tangy parmesan, and savory pork. While the first gourmand to grind it all together is lost to history, we happily carry on the tradition of crafting this unique sausage at our Hudson Valley farm.
